&lt;p&gt;My younger sister and I woke up early to make my mom breakfast before she got home from work.  What was on the menu?  Goat Cheese Scrambled Eggs with Chives (served with sourdough bread) and Chocolate Chip Walnut Pancakes (served with fresh strawberries and mangoes).&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Goat Cheese Scrambled Eggs&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;Serves 2 (good-sized portions)&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;5 eggs (our eggs were small)&lt;/li&gt;
&lt;li&gt;A splash of milk&lt;/li&gt;
&lt;li&gt;Goat Cheese&lt;/li&gt;
&lt;li&gt;Butter (for the pan)&lt;/li&gt;
&lt;li&gt;Salt and Pepper&lt;/li&gt;
&lt;li&gt;Chives&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;I like to crack the eggs directly into the pan (low-heat!) and stir them with a splash of milk.  Add small pieces of goat cheese (how much is up to your preferred taste) and keep stirring with a spatula to keep the eggs from sticking to the pan.  If the eggs are setting too quickly, you can adjust the heat by moving the pan back and forth.  Add salt and pepper.  When they’re done, they should be nice and fluffy.  Add small pieces of chives and that’s it!  They’re delicious with a nice piece of sourdough toast.&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Chocolate Chip Walnut Pancakes&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;I was trying to get rid of all this extra food in the pantry, so I ended up making two batches of these to finish the creamy peanut butter.  They were wonderful right out of the oven—soft and full of chocolatey, peanut buttery, oatmeal goodness.&lt;/p&gt;
